Introducing Executive Chef Patrick Morris

Patrick Morris has been appointed Executive Chef and will oversee the Resort’s six outlets – Sublime Lounge, Jamison’s Restaurant, Embers Restaurant, Leura Golf Course Bistro, Two Doctor’s Whiskey Tavern, and a new Fine Dining Restaurant coming soon. Additionally he also oversees Conferencing (15 meeting rooms with maximum capacity of 850 delegates theatre style) and Room Service.

Patrick comes to the Resort with extensive experience as an international chef, having worked in luxury hotels in Japan, Thailand, Vietnam, and Australia.

I’m looking forward to partnering with our local suppliers and further developing the Resort’s already significant sustainability practices.
